Abstract

Hydrolysisof starch is one of the methods to make glucose. Starchcan be obtainedfrom banana. The hydrolysiscan be catalyzedby an acid or an enzyme.The objective of the research was to seek tne effect ot tne aCId concentration on tne hydroiysisof bananastarchat 100 "C of temperatureandatmosphericpressure.The experiment was carried out in a stirred reactor equipped with condensor. The hydrolysis were pseudo first order with respect to starch concentration. Increasing acid concentration caused the rate constant of hydrolysis increases. The rate constant of starch hydrolysis is related to the acid concentration by: k' = O.O83067e..o,0327[H+] This equation is valid for temperature 100 "C and HCI concentration 0,05N - 0,3 N
