Abstract

Caesalpinia sappan Linn is one of natural pigments resources for foods that produce a red pigment called brazilin. Dye brazilin obtained through solvent extraction process using water. The study aims to determine the optimum conditions for extraction of the dye brazilin with variable ratio of specimen’s, temperature, agitation rate and determine the mass transfer coefficient (kca). Content of the dye brazilin from 10,1% g wood cup powdered dye / g dry wood cup obtained by using Soxhlet extraction. Determination of optimum conditions of extraction is done by using a three-neck flask for 100 minutes and sampling every 10 minutes. This study were obtained under optimum conditions of extraction of dye brazilin on the ratio of 9 g: 300 ml of solvent, the temperature of 100oC and agitation rate of 400 rpm.
