Development of nutritionally improved foods, through: addition (fiber), reduction (sugars, fats, salt). Effect of addition of aroma-medicinal bioactives such as: antioxidants, antimicrobials and/or possible functional effects on health. As well as: sensory impact (acceptability), effect of the manufacturing process on bioactive degradation, and shelf life of the food. Study of the availability of phenolic compounds by in vitro digestion.
