ANALISIS PENGENDALIAN MUTU KOPI DENGAN MENGGUNAKAN DIAGRAM FISHBONE BERDASARKAN STANDAR SCA (SPECIALTY COFFEE ASSOCIATION) PADA KOPI ARABIKA PALINTANG, BANDUNG TIMUR
Abstract
This study aims to identify the factors that affect the quality of coffee, identify efforts that can be made regarding control in accordance with the quality standards of the SCA (Specialty Coffee Association), and determine the steps for implementing quality control of Arabica Palintang coffee. The basic research method used is descriptive analysis. This study was conducted on 7 (seven) farms owned by farmers in Palintang, East Bandung, West Java. The data used in this study are primary and secondary data. Data analysis was carried out using a check sheet, pareto diagram, and fishbone diagram. The results of the study indicate that the main problems that affect the quality of coffee are broken coffee beans at 57.14%, coffee beans with insects at 28.57%, and coffee beans with mold at 14.29%. Factors that affect the poor quality of Arabica Palintang coffee are man-made, which includes farmer negligence in controlling pests and the lack of farmer knowledge; method, which includes improper coffee bean picking techniques; material, which includes the cleanliness and health conditions of the ingredients; and environment, which includes weather and temperature that are sometimes unsupportive.
