PENGENDALIAN MUTU TAHU DENGAN APLIKASI DIAGRAM FISHBONE DAN PARETO PADA UD BERKAH LESTARI KECAMATAN ADIWERNA KABUPATEN TEGAL
Abstract
Abstract : UD Berkah Lestari is a unit of trading company owned by individuals enggaged in the production of tofu in Adiwerna District, Tegal Regency. The research aims to find out the quality control process that has been going on, find out the problems faced related to quality, find out the dominant factors that influence the quality of tofu, and discover the appropriate formulation of tofu control to be applied in UD Berkah Lestari. Basic method of this research was descriptive analysis. The research located in UD Berkah Lestari Adiwerna District, Tegal Regency. The method of determining disability was done by observation for 15 days. Analisys of the factors that influence the quality of tofu products used pareto diagram and fishbone diagram. The results of the study showed, the process of quality control of tofu consist of three stages, namely controlling raw materials, controlling production and controlling product. There are 4 problems that occurred in tofu, namely the texture of tofu is too hard, flabby, tofu smells, and tofu has dirt. The most dominant tofu problem is the tofu texture which is too hard as much as 39.07%.
