APLIKASI DIAGRAM FISHBONE DALAM PENGENDALIAN MUTU JAMUR KUPING KERING (STUDI KASUS PADA UD SKY AGRO KABUPATEN KARANGANYAR)

Abstract

Abstract: This study aims to determine the quality control process that has been going on, to know the problems about the quality, the dominant problem, the dominant factors that influence the quality of dry mushrooms, and the right dry mushroom quality control strategy for UD Sky Agro. The basic method of research is analytical descriptive. The location of research is on UD Sky Agro Karanganyar Regency. The method of analysis used recording disability (observation), pareto chart, and fishbone diagram. The result of the research shows that: (1) Quality control process of dry ear mushroom are raw materials, cultivation, and postharvest, (2) The problems that occurs in dry ear mushroom are small mushroom size, red mushroom, and spots white. (3) The most dominant problem are small size and the red color with 85.37%. (4) To improve the condition, UD Sky agro has done several action which are: (A) Man: Conduct an evaluation work every day, UD Sky Agro in sorting baglog based on their SOP, provide assistance to employees to be more careful in giving the dosage of raw materials. (B) Method: to provide training of watering techniques. (C) Material: adjust the ratio of watering equipment to the number of mushroom kumbung, extend the partnership of raw materials, increase the inventory of dolomite raw materials. (D) Machine: add watering device for each mushroom. (E) Environment: creating schedule for sterilization of mushroom kumbung, training for employees to recognize temperature changes, some clear fiber roofs in the kumbung are spread out.
